Greeting from Under the Rock

Hello folks. It's been a long time!  I am a mother now of a one year old little boy, Ethan.  Being a mom is wonderful and fulfilling  in a sleep deprived and nerve wrecking way.  My son inspires me to be better and work harder to provide for him, so I am working mom now.   Pregnancy and raising a a child have been much harder than I had anticipated.  I have new found respect for all the mothers out there and especially for my grandmother who raised eight daughters as a single mom.  How do I find time to blog today? My husband is sleeping in the car with Ethan (I have an hour to myself wee!)

Cooking? Well, I just eat Ethan's leftover.  My husband is left fending for himself, until I discovered the slow cooker. I love the idea of throwing ingredients in a pot, leave it, and enjoy delicious (and usually nutritious) soul food for days.  It also cut down on our spending on take-out, dine-out, and meat (stewing meat are much cheaper).  We waste less food as well.

 I bought the top-of-the-line, largest-available, multi-functional Cuisinart MSC-800C. $229.00 at Cookworks.  Usually, stewing still requires separate sautéing and browning first, which I can do directly in this machine. No more extra pans to wash. 7quarts capacity means I can eat for DAYS without having to cook.  I love it so much that I bought my brother one.

So we bought this machine in August and the front panel cracked down right after Christmas. Thankfully it wasn't during Christmas.  I took it back to Cookworks and they promptly gave me a new one FREE! No hassle. So, if you are in the market for a slowcooker, get it from Cookwork. It's worth it.

Anyway, hopefully I will get to blog more now that Ethan can play more independently...  Maybe I will start with baby cook book review? Slow cooker recipes? Oh I am excited!
